Recipe: Homemade 5 Ingredient Granola Bar


These are a healthy, quick breakfast or late morning snack to grab and go as you’re running out the door.

Ingredients:

  • 1c packed dates, pitted
  • 1/4c honey or agave nectar
  • 1c cup creamy natural peanut butter or almond butter
  • 1c raw unsalted almonds, loosely chopped
  • 1 1/2c rolled oats
  • optional: dried fruit, additional nuts, vanilla

Instructions:

  • Process dates in a food processor until there are only small bits remaining. It should form a “dough” like consistency.
  • Place oats, almonds and dates in a bowl and set aside
  • Warm honey and PB in a small saucepan over low heat. Stir and pour over oat mixture and then mix, breaking up the dates to disperse throughout.
  • Once thoroughly mixed, transfer to an 8x8 pan lined with plastic wrap or parchment paper.
  • Press down until uniformly flattened. Cover with parchment or plastic wrap and let sit in fridge or freezer to harden 15-20min.
  • Remove bars from pan and chop into bars. Store in an airtight container. Bars will stay fresh for a couple of days. Keep them in the freezer to have them last longer.
