Recipe: Freezer to Slow Cooker Chicken Fajita (Crock Pot)


Wouldn’t it be great to come home to a hot cooked meal, ready and waiting for you? Well, here is an idea to help with that.

( 5-6 servings)

Ingredients:

  • 2 of your favorite peppers
  • 1 onion
  • 1 1/2 pound chicken breast
  • 1/2 cup chicken broth
  • low sodium taco seasoning packet (or homemade taco seasoning to reduce sodium and avoid preservatives)
  • 1 tsp. chili powder
  • 1/2 tsp. paprika
  • 1 tsp. salt
  • tortillas
  • favorite fajita toppings such as tomato and avocado

Directions:

  • Put all the ingredients in a large freezer bag. (Make sure you label the bag with instructions.)
  • When it’s time to cook it, dump it all in your slow cooker and cook on high for 3-4 hours or low for 5-6 hours.
  • Once meat is cooked through, shred it and mix with the pepper mixture for serving.
