Recipe: Turkey and Apple Picadillo
Tired of the same-old same-old with your ground turkey? Try this sweet-and-savory Cuban-inspired dish to shake things up a bit!
Ingredients
- 1 tbsp extra-virgin olive oil
- 1 red onion, finely chopped
- 2 cloves garlic, minced
- 1 lb ground turkey
- 1 tsp ground cumin
- 1 tsp dried oregano
- 1/2 tsp salt (sea salt preferred)
- 1/2 teaspoon ground pepper
- 1/4 teaspoon ground cloves
- 2 tablespoon apple cider vinegar
- 1 firm crisp apple, finely chopped (about 1 cup)
- 1 cup chopped tomato
- 1/4 cup chopped green olives
- 1 tsp Worcestershire sauce
- 1/2 cup chopped scallions
Preparation
- Heat oil in a large skillet over medium heat.
- Add the onion and garlic and cook until soft, about 2 minutes.
- Add the turkey and cook until browned (being sure to break up clumps), about 4 to 6 minutes.
- Stir in the cumin, oregano, salt, pepper and cloves; cook for about 30 seconds.
- Stir in vinegar, scraping up any browned bits.
- Stir in apple, tomato, olives and Worcestershire sauce.
- Reduce heat and gently simmer, stirring often, until any liquid in the pan has reduced to a syrupy glaze, about 8 minutes.
- Stir in scallion greens and serve over brown rice, whole-wheat couscous, or quinoa; or wrap with whole-wheat tortillas.
