Recipe: Turkey and Apple Picadillo


Tired of the same-old same-old with your ground turkey? Try this sweet-and-savory Cuban-inspired dish to shake things up a bit!

Ingredients

  • 1 tbsp extra-virgin olive oil
  • 1 red onion, finely chopped
  • 2 cloves garlic, minced
  • 1 lb ground turkey
  • 1 tsp ground cumin
  • 1 tsp dried oregano
  • 1/2 tsp salt (sea salt preferred)
  • 1/2 teaspoon ground pepper
  • 1/4 teaspoon ground cloves
  • 2 tablespoon apple cider vinegar
  • 1 firm crisp apple, finely chopped (about 1 cup)
  • 1 cup chopped tomato
  • 1/4 cup chopped green olives
  • 1 tsp Worcestershire sauce
  • 1/2 cup chopped scallions

Preparation

  • Heat oil in a large skillet over medium heat.
  • Add the onion and garlic and cook until soft, about 2 minutes.
  • Add the turkey and cook until browned (being sure to break up clumps), about 4 to 6 minutes.
  • Stir in the cumin, oregano, salt, pepper and cloves; cook for about 30 seconds.
  • Stir in vinegar, scraping up any browned bits.
  • Stir in apple, tomato, olives and Worcestershire sauce.
  • Reduce heat and gently simmer, stirring often, until any liquid in the pan has reduced to a syrupy glaze, about 8 minutes.
  • Stir in scallion greens and serve over brown rice, whole-wheat couscous, or quinoa; or wrap with whole-wheat tortillas.
